Cocoa

Cocoa is the dried and partially fermented fatty seed of the cacao tree. The Aztecs revered the cacao and made a drink exclusively for the nobility from cocoa beans and chilies, which they called "chocolatl." In the US, cocoa often refers to cocoa powder, the dry powder made by grinding cocoa seeds and removing the cocoa butter from the dark, bitter cocoa solids. Today, about 3,000,000 tons of cocoa are grown each year and used in foodstuffs. What are some of the uses for cocoa butter?
