Chinese Food, or So You Might Think

Today, Westerners exposed only to "American Chinese food" may not know how it differs from authentic Chinese cuisine. One difference involves the use of vegetables: Chinese cuisine relies on leafy greens like bok choy and Gai-lan, while Americanized dishes feature produce like broccoli and carrots.
